
Mom’s Chicken Tortilla Soup Recipe
This is a delicious soup that includes a little bit of chicken and that will make it perfect for any occasion. You can have it in lunch or dinner or maybe just as a side dish to make anything you make taste better, this is a very easy recipe and you will enjoy while doing it.
You will need:
Garlic (3 cloves, minced)
Onion (1, chopped)
Margarine (3 tablespoons)
Chicken broth (3 cans or 14 ounces)
Cream chicken of soup (1 can or 10.75 ounces)
Fresh salsa (1 cup)
Cream corn (1 can or 15 ounce)
Chicken breast halves (6 boneless, cooked, skinned)
Cumin (2 teaspoons, ground)
Dry fajita seasoning (1 packet or 1.27 ounces)
Tortilla chips (16 ounces)
Monterrey Jack cheese (8 ounces, shredded)
How to do it:
Take a large pot and take it over medium heat, in here you need to sauté the garlic, onion and the butter or if you prefer margarine for 5 minutes and in here you can add the flour and stir it very well, you have to do this for a minute or maybe more and in here you can add the broth and mix it half and half, then you can bring everything to a boiling point and then reduce the heat to a minimum low. In this moment you will add the salsa, corn, chicken and the fajita seasoning, also add 2 tablespoons of cilantro, in here you can stir for 15 minutes, after this you can add the tortilla chips and pace them in the bowls you will serve them, also add the remaining cheese and the remaining cilantro, then you can serve it.
